*PHILLY-CHEESESTEAK-QUESADILLAS*




*Ingredients

°2 flour tortillas/burrito
°1/2 lb beef (rib eye or top round), thinly sliced ​​or diced
°1/2 medium onion, chopped
°1/2 red bell pepper, diced
°1/2 green bell pepper, diced
°6 oz mushrooms, diced
°3 tranches provolone cheese (avoid aged cheese)
°1 tablespoon light olive oil, divided
°1 clove garlic, minced
°¼ tsp sea salt, or to taste
°1/8 teaspoon ground black pepper, or to taste
°2 tsp mayonnaise, optional

* Methods 

In  frying pan, heat 2 teaspoons of oil, once hot adding minced meat. Seasoning with salt & pepper & cooking to the meat is cook through. Removing from skillet and cover to keep warm.

Meanwhile, finely chopping onion, cutting mushrooms & peppers into cubes. Sautée vegetables in same skillet to tender, add tsp of oil if need.
Return the beef to the skillet with the minced garlic, stir and cook until the meat is warmed through.

Spreading mayonnaise (if using) on ​ tortillas. Divided filling between tortillas, adding them to one side of tortilla. Topping sliced ​​cheese filling & close tortilla
Heat skillet on medium heat. For crispier tortilla, add a little oil to the pan. Place tortilla in hot skillet also sauté until cheese is melt and outside is golden brown & crispy, turning once. Slice & serve.
