*Ingredients:

°1 1/2 pounds ground beef
°1 tablespoon dried and chopped onion flakes (or small diced onions)
°1 can refried beans (16 oz)
°1 package taco seasoning
°3 cans of enchilada sauce
°12 tortillas (6 inches)
°3 cups grated cheddar cheese

* Instructions :

Preheat oven 350.  Lightly spray a 9×13-inch pan with cooking spray.
In  skillet, browning ground beef. Drain fat. Return the meat to the skillet. Stirring in onion flakes, refried beans & taco season. Cook over low heat until the meat is heated through. Put aside.
Heat enchilada sauce in a saucepan on medium heat. Pour a cup of sauce into the bottom of a 9×13 inch pan.
Wrap the tortillas in a damp paper towel. Microwave about 45-60 sec, to tortillas are tender. Brushing tortillas with enchilada sauce on sides. Spoon about 1/3 cup of meat mixture down the center of each tortilla. Topping with a tsp of cheese. Roll up the tortilla and place it, seam side down, in a 9 x 13 inch pan. Repeat with the remaining tortillas. Pour the rest of the sauce over the tortillas. Top with remaining cheese.
Bake for 15 to 20 minutes, until the cheese is melted and the enchiladas are heated through.
