Like many of the pasta salads I love, this one is packed with fresh veggies. I like to add about 1/2 cup of vegetables to my salad for every ounce of pasta (that's 6 cups of vegetables for 8 ounces of pasta).

It may seem like a lot, but I promise you, this ratio won't result in a lot of veggies. It's the best balance I've found to heighten the texture and flavors of this Italian spaghetti salad.

You can make this recipe with any kind of vegetables you want to eat or eat them raw. Simply cut the vegetables into more or less equal sized pieces. This ensures maximum variety of textures and flavors in every bite.
