Chocolate cake recipe


+Serves 8 to 10 persons
°200 grams of dark chocolate with 52% cocoa
°125g unsalted butter (or semi-salted for sweetness)
°100 gm T65 wheat flour
°1 sachet of baking powder (10 g).
°4 large organic eggs
°200g caster sugar (or rather 150g according to comments)
°pinch of salt

Preparation: 20 minutes
Cooking: 30 minutes
Here are the steps to prepare a delicious chocolate cake:
1. Chop the chocolate and butter into small pieces. Melt in a bain-marie until you get a homogeneous mixture. Remove from heat.
2. Add the sifted flour and baking powder to the melted chocolate.
3. In a bowl, whisk the yolks with the sugar. Then we add the chocolate mixture.
4. In another bowl, whisk the egg whites with a pinch of salt. Gently fold them into the chocolate mixture.
5. Pour this mixture into a parchment-lined springform pan (24 to 26 cm in diameter).
6. Bake for 20 to 25 minutes in the oven at 180°C. Watch the end of cooking by pricking the cake with the blade of a knife: it should come out dry. Leave the chocolate cake to cool completely before undoing it.
