Beef Enchiladas!!!



*INGREDIENTS
  

°1 kit for Old El Paso Enchiladas
°2 onions
°500 grams of ground beef
°1 red pepper
°1 tablespoon heavy cream
°150 grams of grated cheese mix 3 cheeses or Emmental
°olive oil
°salt

*INSTRUCTIONS
 
Peeled and finely chop the onions. Cutting pepper in 2, deseed it and cut it into small dice.
In a large sauté pan, heat a drizzle of olive oil. Sauté the onions and bell pepper for 5 minutes.
Add the crumbled minced meat and sauté for 5 minutes, stirring. Add half of the tomato sauce, the enchilada spices and a little salt. Mix then cover and simmer over low heat for 20 minutes, stirring occasionally. Off the heat, add the fresh cream and 50 grams of grated cheese. To mix together.

Heat  tortillas in the microwave for 30 seconds, taking care to pierce the bag first.
Divide the mixture among the tortillas, roll them up and arrange them in the dish. Spread the rest of the sauce and sprinkle with the rest of the cheese.
Leave to cool for 5 minutes then wrap in cling film and put in the fridge immediately.

Take the dish out of the fridge 30 minutes before cooking and remove the cling film. Preheat the oven to 200°C, fan-assisted, then bake for 20 minutes.
