Shrimp Fried Rice



1 tbsp. oil
1 tbsp. minced garlic
1 lb. medium shrimp, cleaned and deveined
3 cups cooked white rice
2 cups frozen peas and carrots, thawed
2 tbsp. soy sauce
2 tsp. sesame oil
1 large egg, beaten
2 tbsp. chopped green onions
Steps to Prepare:

Begin by washing the shrimp thoroughly and set them aside to drain.
Cook the white rice as per its instructions, and once done, keep it aside.
Heat a skillet over medium flame and introduce oil and garlic into it. Allow the garlic to sauté until it exudes its aroma, which typically takes about a minute.
Introduce the peas-carrots combo along with the shrimp to the pan, ensuring you mix well. Let these ingredients meld together and cook for around 5 minutes.
In a separate dish, whisk together the aromatic sesame oil with the savory soy sauce.
Pour the rice into the skillet, following up with the soy-sesame sauce blend. Mix these ingredients well and let them sauté together for an approximate 4 minutes.
Now, clear one side of your skillet, and pour in the beaten egg on the other. Keep stirring the egg until it's almost done, and then incorporate it with the rice and shrimp blend.
As a finishing touch, garnish your fried rice with a sprinkling of fresh green onions.
