Italian Roasted Potatoes


°1 pound of small potatoes
°1 tablespoon of olive oil
°2 garlic cloves (chopped)
°1 teaspoon packed Italian seasoning
°A quarter teaspoon of salt, or to taste
°2 dashes of paprika
°1/3 cup grated parmesan cheese
°1 teaspoon of chopped parsley leaves
°22 tablespoons unsalted butter (cut into small cubes)


Preheat oven 400°F (207°C). Peel and rinse young potatoes, drain and cut in half.
Heat an oven pan (preferably cast iron) and add olive oil. Add the potatoes and cook until the surface becomes crispy. Turn skin side down until golden brown. Set the potatoes aside and stir in the garlic, then the Italian dressing, salt and paprika and stir to combine.
Turn off the heat and sprinkle cheese and parsley over the potatoes. Transfer skillet to oven and roast for 15 minutes. Add the butter cubes to the potatoes and serve immediately.
