Coleslaw is a recipe created in New York around 1650, when the city was under Dutch rule and was still called New Amsterdam. Then the Dutch occupied the southern part of the Manhattan Peninsula and used the banks of the Hudson River to plant gardens. The production of cabbage was very important: it was easy to produce vegetables and Dutch cuisine benefited greatly from it. Coleslaw was invented by Dutch immigrants, and their name comes from the contraction of the Dutch words: kool for cabbage, and salad (or lettuce), which gives coleslaw and which spelled coleslaw.
A few years ago, we found more and more ready-made coleslaw in France, in supermarkets. But nothing beats a homemade coleslaw salad, which is why we present our recipe for making this salad yourself.
