Oatmeal Lace Cookies


Ingredients:


2 cups light brown sugar

1 cup butter

1/4 cup all-purpose flour

2 1/2 cups rolled oats

1 teaspoon salt

1 egg, gently whisked

2 teaspoons vanilla extract

Instructions:


Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.

Gently melt the butter in a saucepan over low heat.

Blend in the brown sugar until smooth.

Remove from heat, then mix in vanilla, flour, and salt. Allow it to cool for about 10 minutes.

Stir in the whisked egg and oats until the batter is well combined.

Spoon rounded tablespoons of batter onto the baking sheet, spaced apart to allow for spreading. Flatten each spoonful into a circle for even baking.

Bake for 8-10 minutes, until golden brown around the edges.
