Ingredients:


1 cup of pecans, finely chopped

7 tablespoons of unsalted butter

1/3 cup of white sugar

1 cup of brown sugar, packed

2 large eggs

1 tablespoon of vanilla extract

2 cups of all-purpose flour

1/2 teaspoon of baking soda

A dash of salt

Pecan halves for garnish

Instructions:


Preheat your oven to 350°C. Line two baking sheets with parchment paper.

In a large mixing bowl, beat together butter, granulated sugar, and brown sugar using an electric mixer until the mixture is smooth and creamy.

Incorporate the eggs and vanilla extract into the mixture, and continue to beat for an additional 2 minutes.

Gradually mix in the flour, baking soda, and salt, ensuring the dough is well combined.

Form the dough into balls using a cookie scoop or two spoons, and place them on the prepared baking sheets.

Gently press a pecan half into the top of each cookie.

Bake in the preheated oven until the cookies are golden brown, approximately 10 to 15 minutes. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
