Crust and Topping:
Pinch of salt
1 ½ cups all-purpose flour
¾ cup cold butter, cubed
½ cup sugar
Filling:
Pinch of salt
2 large eggs
½ cup flour
1 cup sugar
16 oz can crushed pineapple
½ cup sour cream
Icing:
1 teaspoon coconut extract
1 cup powdered sugar
2 tablespoons half and half
Instructions:
Preheat your oven to 350°F (175°C).
For the crust, mix flour and sugar in a bowl. Cut in cold butter until crumbly. Reserve 1 cup of this mixture for the topping.
Press the remaining mixture into the bottom of a greased 9x13-inch baking dish. Bake for 15 minutes until golden.
In a separate bowl, mix all filling ingredients. Spread this over the pre-baked crust.
Sprinkle the reserved crust mixture on top as a crumbled topping.
Bake for 1 hour, or until the top is golden and the filling sets.
Cool the bars for 15-20 minutes.
For the icing, beat together the icing ingredients until smooth. Adjust consistency with more half and half if needed.
Drizzle the icing over the bars.
Cut into servings and enjoy.
