While these are known as Christmas cookies, I'll be the first to admit I eat these year round because they are that good!



2 cups all-purpose flour

3/4 cup maraschino cherries, chopped and patted dry

1 cup unsalted butter, softened

1/2 cup powdered sugar

2/3 cup mini chocolate chips

1/2 tablespoon vanilla extract

1/2 teaspoon salt


Set your oven at 325°F (160°C) and prepare a baking sheet with parchment paper.

Whip up a creamy mixture using butter, powdered sugar, and vanilla extract in a large bowl.

Slowly blend in the flour and salt, forming a soft dough.

Delicately mix in the cherries and chocolate chips.

Shape the dough into a log, wrap in cling film, and chill for an hour. Slice into rounds afterward.

Bake for 12-15 minutes until the edges are golden. Let them cool on the tray for a bit, then transfer to a cooling rack.

Serving Tip: Elevate their appearance with a dusting of powdered sugar or a milky glaze drizzle.
