Let's attack the middle of the week with these Vegan Snickerdoodle Muffins. Ultra soft, super crispy on the outside, preferably served warm :). Perfect for small cravings, breakfast or for anyone who loves muffins in general. It is your ally for autumn with the perfumes associated with this season. Cinnamon and vanilla.

How can I describe these vegan muffins to you? I think that first there is the layer of cinnamon sugar which caramelizes and gives an unstoppable crispness when cooked. Inside it is certainly soft but the texture reminds me a little of canelés but without the taste. This side a little "egg" and very moist. I think that with another formulation, a canelés recipe can potentially be made.

And to think that in a few days now we are moving on to the year 2023!!! Do you have something planned? We not especially, I think it will be a quiet evening with a good meal. But how time flies. And to gently enter this new year, there is nothing better than a recipe for vegan muffins. It's been a while since I made muffins so I wanted to fix it with today's recipe.
