Easy Mexican Street Corn



This very popular snack is consumed in all corners of Mexico. The cobs are first grilled and then rolled in a mixture of “cotija” cheese, which makes the cobs delicious but sometimes a little too runny. So I replaced this cheese with feta, which is also much easier to find here. Corn can be grilled, boiled, or microwaved.


This Mexican Street Corn (also called Elotes) is just what you need on a fantastic hot summer day! Roasted (or grilled) corn with a creamy garlic-chipotle sauce, then topped with queso fresco and smoked paprika for tons of tangy flavor! Serve it with your favorite Mexican dishes for an authentic and delicious meal!
