Fried Mash Potato Ball



*INGREDIENTS:

°3 bed. leftover mash potatoes
°3 slice bacon, cook & crumbled
°2/3 tsp. cheddar cheese
°2 tbsp. finely chopped chives
°1/2 tsp. garlic powder
°Kosher salt
°Freshly ground black pepper
°2 eggs, beaten
°1 1/3 tsp. panko breadcrumbs
°Vegetable oil, for frying

*DIRECTIONS:

In  bowl, mixing mash potatoes with cooked bacon, cheddar, chives also garlic powder, also season with salt &; pepper. Stirring to all ingredients are incorporate
Placing eggs & panko in separate shallow bowl. Use a small cookie scoop to scoop out 1-2 inch balls of mashed potato mixture. Roll into a ball in your hands, then dip first in the egg, then in the panko. Repeat to all mash potato are use.
Heat 3 inches of oil in a large cast iron skillet until the candy thermometer reads 375°. Fry potato dumplings in batches until golden brown on all sides, 2 to 3 minutes. Drain on a paper towel-lined plate and immediately season with more salt.
