Cracker Barrel Chicken & Dumplings



*Ingredients

°6 cups of chicken broth
°2 celery ribs, broken in half
°1/2 medium onion (keep it like a piece of onion)
°1 lb boneless, skinless chicken breasts, each breast cut in half
°3 cups all-purpose flour
°1 tablespoon baking powder
°1 1/4 tsp salt
°1 cup + 2 tablespoons of milk
°Salt and pepper to taste

*Methods :

In a pot or Dutch oven, add the broth, celery, onion and chicken breasts.

Bring to a boil, then reduce heat and simmer, partially covered, for about 15 minutes, until chicken breast is cooked through. While the chicken cooks, prepare the meatballs.

In  bowl, combine flour, baking powder // salt. Stir in milk until combined into a fluffy batter.

Turn the dough out onto a floured surface and roll out to about 1/4 inch thick.

Use a pizza cutter to cut the dough into strips or squares about 1 to 2 inches.

Once the chicken is fully cooked, place it on a cutting board. Remove the piece of onion and the pieces of celery and discard them.

Add the dough strips to the simmering broth and simmer for about 20 to 30 minutes, stirring occasionally, allowing the dumplings to cook and the broth to thicken until they reach a consistency similar to that of 'a sauce. 

While the meatballs simmer, shred or chop the chicken and return it to the pot.

Season with salt and pepper to taste, then serve hot.
