Blueberry Lemon Muffins



Easy to make, packed with delicious blueberries and flavored with a hint of fresh lemon. What a great way to start the day!

*Ingredients :

°⅓ t. (75 mL) milk
°¼ t. (50 mL) canola oil or vegetable oil
°¾ t. (175 mL) Yoplait® Source® Vanilla Greek Yogurt
°1 egg
°1 ¾ t. (375 mL) all-purpose flour
°¼ t. (50 mL) sugar
°1 C. (15 mL) lemon zest, grated
°1 C. (15 mL) lemon juice
°2 ½ tsp. 1/2 tsp baking powder
°½ tsp 1/2 tsp (2 mL) baking soda
°½ tsp. 1/2 tsp (2 mL) salt
°¾ t. (175 mL) fresh or frozen blueberries (do not thaw)

* Steps :

Preheat the oven to 400°F (200°C). Grease the bottom only of a 12 muffin pan or place paper cups in it.

In a large bowl, beat the milk, oil, yogurt and eggs with a wire whisk or a fork. Stir in remaining ingredients, except blueberries, until flour is moistened. Gently stir in the blueberries. Distribute the mixture evenly in the moulds.

Bake for 16 to 18 minutes or until golden brown. Let cool 5 minutes; unmold.
