BEAN AND HAM HOCK SOUP




*ingredients :

°250gm cooked dried beans.
°1 medium onion.
°2 islands.
°1/2 wrapped.
°2 stalks of celery.
°4 slices of bacon.
°4 cloves garlic.
°75 cl of chicken broth
°2 tablespoons (m) duck fat.
°Rosemary sprigs.
°1 bay leaf.
°parsley.
°olive oil.
°Grated Parmesan.
°salt pepper


*Preparation :

1.In a large saucepan, saute for 5 minutes in 2 tbsp. of duck fat, 1 medium onion chopped, 2 diced carrots, 1/2 chopped cabbage, 2 chopped celery stalks and 4 slices of Bayonne ham, cut into matchsticks. Add 4 minced garlic cloves, then moisten with 75 cl of chicken broth. Add a few sprigs of rosemary, bay leaf, salt and pepper. Leave to simmer for 20 minutes, then add 250g of cooked dried beans. Leave to cook for 10 minutes.
2- Serve in bowls with some chopped parsley, a little olive oil and grated Parmesan cheese.
