Chocolate Eclairs Recipe




This chocolate eclairs with cream filling and icing is a special formula.

* ingredients :

° 1 c water
° 1/2 c butter, cubed
° 1/4 tsp salt
° 1 c all purpose flour
° 4 eggs 
+filling:
° 2-1/2 cups cold full fat milk
° 1 package (5.1 oz) instant vanilla pudding mix
° 1 cup heavy whipping cream
° 1/4 cup confectioners' sugar
° 1 teaspoon vanilla
+frost:
° 2 ounces semisweet chocolate
° 2 tablespoons butter
° 1/4 cup confectioners' sugar
°  2 to 3 tablespoons of hot water

* Directions : 

Preheat oven 400 degres.
 In  saucepan, bring water, butter & salt to a boil.Add all the flour at once and stir until you have a smooth ball.Remove the stove; keep it for 5 minutes.Adding eggs , whisk well after every  addition.
Keep stirring until the mixture is smooth and shiny.Using a large spatula or pastry tube with # 10 dots or large dots, shape the dough into nine 4x11/2 inch jars.Strips on a greased baking pan. 
Bake for 35-40 minutes or until golden. Remove it to the wire rack. Immediately split open eclairs. Remove the tops and set aside. Get rid of the soft dough from the inside. 
Cool eclairs.In a large bowl, stir the milk and pudding mixture according to the instructions on the package. In another bowl, beat the cream until soft peaks form. Beat in sugar and vanilla. Fold in candy.
Fill the puffs (refrigerate the remaining fillings for other uses).For the microwave frosting, melt the chocolate and butter; stir until smooth. Add sugar and enough hot water to get a smooth consistency. a little bit cold. Frost eclairs. Store in the refrigerator.
